My 3 Favorite Things from July 2024

This July reminded me of two things.

1. You can get sick in the summer. I’m not sure if I had COVID, but I felt run down, congested, and experienced a sore throat. Thankfully I always keep immune system supplements on hand and was able to avoid getting majorly sick!

2. We can get so bogged down in not feeling well and feeling sick, we can forget to have fun too.

After feeling sick (and in need of a vacation!), all I wanted to do was stay in bed to recharge. I was discouraged about getting sick again and felt too sick, tired, and chronically unwell to do much. But, forgot is that we can also get energy from doing things we love and having fun. Sometimes setting boundaries or healing isn’t just about what I say no to, but also how I can add the fun back in. This is especially important for anyone who deals with chronic health conditions and can get stuck feeling like they can’t enjoy life because of their health. Being outside, laughing, being around people you love, and doing something creative are all energy-givers. Finding the balance between fun and relaxing is the ultimate goal!

Because of trying to balance not feeling great and enjoying the summer, here are some really easy recipes and the throat spray I relied on! I love easy no-cook recipes in the summer that focus on fresh food and require minimal prep.

1. Mediterranean Quinoa Salad by Foolproof Living

I’ve made so many different variations of this salad and love it every time. Sometimes I add artichokes, sundried tomatoes, or red peppers for an extra crunch. I’ve also omitted the quinoa and doubled up on the chickpeas when cooking anything is out of the question. It comes together quickly and can be served on top of arugula, on its own, or as a side salad.

Using a high-quality sheep’s milk feta makes this salad so tasty!

2. Beekeeper’s Naturals Propolis Throat Spray

This is a must-have if you are prone to sore throat, swollen tonsils, or even just talk a lot. I always keep the spray on hand to use to soothe my throat and the propolis helps to kill bacteria and viruses. Use throughout the day as needed.

3. Cottage Cheese Bowls

I love high-protein breakfasts but sometimes need a break from eggs. I know cottage cheese is very divisive, but if you like it, you will love these cottage cheese bowl inspirations. I usually prefer a savory bowl with avocado, cucumbers, pumpkin seeds, and maybe an egg on top. I love that they are versatile, require no cooking, and are still high in protein.
