A season of change is here. Spring brings fresh new vegetables, bright flavors, flowers and (hopefully) more sunshine. Check out some of my favorite foods from this month:
1. Spring Veggie Salad by Kale Junkie
I love a high protein, high fiber and hearty salad like this pasta salad that I can make ahead of time and gets better and better each day. I use gluten-free pasta. If you are dairy free, you can easily omit the feta cheese!
2. Nettle Tea from Mountain Rose Herbs
I have thankfully avoided any severe allergy symptoms this year and I contribute a big part of that to drinking daily nettle tea. I started before allergies hit and have continued to drink it daily!
I find it has a mild flavor but sometimes mix it with ginger tea or lemon juice to cover the hint of grassy flavor that sometimes come through. I prefer the loose leaf tea because it’s so much cheaper, but opt for the tea bags when I am travelling/on the go. If you have allergies this is a must try!
3. Paleo Carrot Cake Banana Bread by Paleo Running Momma
Spring is here and for me that means trying out new recipes and flavor that feel like spring! I am a horrible baker, especially gluten free baking, but everything I make from Paleo Running Momma is delicious! Her recipes are gluten and dairy free but don’t use 100 expesnive/weird ingredients.
