This is a cooked relish. I recommend making at least 1 day ahead of time, for the flavors to blend. Then you’ll have a better idea if you need more sugar.
It can easily be doubled.
Ingredients
- 1-12 oz package of cranberries
- 1 large orange
- ½ – 1 cup raisins (any kind)
- ½-1 cup sugar (white, brown, palm all ok)
- Orange or apple juice or water for bottom of pot
- 1-Tablespoon triple sec or Cointreau
Instructions
- Peel and cut the orange into small chunks
- Add the juice to a small or medium pot
- Add all of the remaining ingredients into the pot except the liquor and sugar and stir.
- Cook over medium heat till boiling, then turn down.
- Once the cranberries are soft, mix in the sugar and liquor.
- Always stir often as it likes to stick to the pot. When you think it’s soft and almost sweet enough, it’s done! Let cool and enjoy
Notes:
You can adapt the recipe to your desired level of sweetness. The raisins naturally add sweetness but you can alter the amount of sugar as desired. The next day, as the flavors meld, it might taste sweet enough. If not, simply add more sugar. We like it a bit tart
