Egg-Free Breakfast Recipe Round-Up

As the price of eggs are soaring and somer grocery stores are completely out of eggs due to the national egg shortage, many people are looking for high protein breakfast recipes that are egg free. Here’s my round-up of egg-free recipes that are high in protein, fiber and will give you balanced blood sugar and steady energy throughout the whole morning!

*All recipes are gluten free or can easily be made gluten free

Animal Protein-Based Recipes

These recipes are mostly dairy and gluten free. See notes for dairy and gluten free modifications.

Freezer-Friendly Breakfast Burritos

To make gluten free: use a gluten-free tortilla, like Siete Foods brand

Avocado Turkey Burger

To make gluten free: use gluten-free buns or omit the bun. Add cooked potatoes or fruit on the side for cabohydrates

Smoked Salmon Tartine

To make gluten free: Use gluten-free bread or omit the bread and assemble ingrediets atop a bed of arugula

Dairy-Based Recipes

These recipes use dairy as the main source of protein. Adding protein powder or animal based proteins, like sauasges on the side can help boost the protein amount per serving.

Savory Cottage Cheese Bowls

Add chicken susage, chicken patty, ground beef or smoked salmon for extra protein!

Overnight Oats with Greek Yogurt

Add a scoop of your favorite protein powder for more protein

Vegan

Although it can be hard to get adequate protein as a vegan, these recipes are higher in protein than most. Some recipes above can also be modified to use tofu in place of meat. For example, freezer burritos are easily made with tofu scramble.

Final Notes

If you are looking to avoid eggs in the morning, get creative but keep things simple. Ground beef, turkey sausages, chicken patties are all great high-protein and easy to prep protein for breakfast. Use dairy, protein powder and tofu to supplements these proteins for a variety of nutrients and flavors. And don’t forget, your breakfast doesn’t necessarily have to have “breakfast foods”. Soups, salad bowls and leftovers all make for a great egg free breakfast.
